We shifted from Hunter-Gatherer society to Farming many many years ago.
And ever since then, whole grains have been a central component of our nutrition.
Back then, when we ate off the land, people were lean and had strong bodies.
In North and South America, corn was the primary grain.
In India and Asia, it was rice.
In the Middle East, they ate wheat, tabouli and couscous.
European dined on corn, millet, wheat, rice, dark breads and even beer was considered health-providing
food.
In the Andes Mountains of Argentina grows a grain with the highest nutritional profile.
It is called – Quinoa.
It is also the fastest cooking grain.
This is the grain that helped the Incas run long distances in such high altitudes.
Quinoa is also a complete protein in itself with all eight amino acids.
It is gluten free, high in Vitamin B, Vitamin E, Potassium, calcium, iron, zinc and is an ideal food for
endurance.
On the other side of the world, the Russians consumed buckwheat. Due to its long transit time in the
stomach, it leaves the body feeling full for a long period.
It is rich in E and B-complex vitamins.
It is gluten free, enhances blood and improves circulation.
A tasty way to eat buckwheat is to roast the grain until it is a deep amber color. Then it becomes Kasha.
It is a wonderful breakfast with nut milk, or an afternoon snack as part of your trail mix.
Have you considered switching from white rice to brown rice?
Brown rice contains the highest amount of B vitamins out of all grains.
It also contains iron, vitamin E, amino acids and is rich in fiber, while being extremely low on sodium.
Composed of 80% complex carbohydrates, it is a complete food.
Brown rice takes longer to digest than white rice, thus providing the body with sustained energy throughout
the day.
So, who gets the top award?
Quinoa, Brown rice and Buckwheat, each take a top award. Make lots of it and have it for various meals
throughout the day.
We live in magnificent times where you can find any grain in any city. Even if you have to google and ship it.
